how we brew

Our commitment to excellence ensures that every cup of our Koko Samoa is a pure and enjoyable experience. Our koko is 100% pure ground cacao paste. This is raw dark chocolate so is bitter to the taste. Traditionally, Samoans make drinking koko from cacao paste and add sugar during the boil process.

Our koko is untempered which helps it melt faster in your cup. As a result it can develop bloom.

Bloom is when the fat content separates from the koko and rises to the surface. Bloom can often look like a marbled, powdery streaky substance. This is normal in untempered chocolate and is still perfectly safe to consume.

*May contain traces of cocoa husk and cocoa nibs.
