Koko Samoa is a Samoan hot chocolate drink made from 100% cacao paste. Historically made by roasting the cocoa beans over an open flame using a hot plate or grill, then ground by hand with a home made mortar and pestle. The result is a gritty, coarse paste with chunks of cacao nibs still inside.
Considered the national drink of Samoa, koko is a staple in most households and produce markets both in Samoa, New Zealand, Australia, and some parts of the United States.
